I like to think that Professor Moio, the founder of Quintodecimo and a luminary in oenology having been a researcher and lecturer at the University of Dijon, may have been the mentor of William Waterkeyn, the very young oenologist at Domaine Jessiaume.
In reality, I don’t know if the two ever met but certainly, Professor Moio’s enormous amount of scientific publications will have helped to shape the young William.
Gravieres reminds me of Moio’s wines in terms of stylistic perfection totally devoid of any sensory deviation. It has magnificent integrity and a propensity to age gracefully.
I wouldn’t really know which to choose but perhaps it is not necessary to do so.
