Eocene has certain characteristics that make it comparable to Krug such as, for example, the use of wood in the first fermentation, a long stay on the lees and lively acidity.
Fallet Dart is a small producer in the Marne Valley that is very dear to us because it is led by two young and enterprising brothers. Although this cuvèe is not a Vintage, just like Krug 171 eme edition, it has an exceptionally long stay on the lees: a good 10 years.
The first fermentation takes place entirely in Barrique and the dosage is very low. The result is a muscular Champagne, powerful but not heavy. It has an exciting brilliance and freshness. Composed of 80% Chardonnay and 20% Pinot Noir.
Only 3,000 bottles produced.
